*update post #winechat: There was a good turn-out for last nights #winechat on sake. Questions came rapidly but our host Richard managed to answer them all. I was saddened to learn that the small traditional sake cups (like I make on the wheel) are not appropriate for Premium sake. Richard recommends using a wine glass instead.

I'm eager to join in tonight, especially since I have two bottles of Sake One sake I received last week at the 5th Annual Wine Bloggers Conference in Portland, Oregon.
Sake is a rice based alcoholic beverage. When you think sake, you probably think Japan. Well, you no longer have to go to Japan to enjoy premium sake. Premium style sake is now made in the U.S. (Junmai, Ginjo, Daiginjo, etc.). And you don't have to drink premium sake hot, you can enjoy it chilled.
Premium sake pairs well with many types of food. A range of styles from sweet to dry sake, balanced acidity, to light or bold styles, allows for a diverse pairing with food.
Tonight during #winechat I'll be tasting Momokawa Pearl and G Joy.
Suggested pairing for Momokawa Pearl: spicy Thai food, spicy barbecue, dark chocolate and fresh berries.
